After salting, the wheels rest on traditional wooden shelves in our climate-controlled storerooms. During this time, extraordinary biochemical transformations occur: proteins break down into free amino acids — including tyrosine, which forms the characteristic white crystals — while fats develop increasingly complex and persistent aromas.

Delicate notes of fresh milk, yogurt and butter, accompanied by vegetal hints of grass and boiled vegetables, with a sweet and slightly acidic flavour. The first tyrosine crystals begin to appear. Versatile and approachable, ideal for those discovering this extraordinary cheese for the first time.
