Nel caseificio Ferrarini & Bonetti, ogni forma di Parmigiano Reggiano attraversa un percorso di stagionatura rigoroso, custodito da mani esperte e scandito dal ritmo lento dei mesi.

After salting, the wheels rest on traditional wooden shelves in our climate-controlled storerooms. During this time, extraordinary biochemical transformations occur: proteins break down into free amino acids — including tyrosine, which forms the characteristic white crystals — while fats develop increasingly complex and persistent aromas.
