The Origins

A story born from one family's passion

Love, passion and dedication: this is where the story begins — with the young Silvestro Ferrarini and his wife Liliana Bonetti, the founders of Ferrarini & Bonetti Srl.

1972 was the year that saw the birth of the Latteria Sociale San Salvatore, an agricultural cooperative of milk producers, and Ferrarini & Bonetti Srl, the dairy processing company.

Everything started with just 6 wheels a day. From that moment on, year after year, investment after investment, that small operation grew into one of the leading dairies in the Parmigiano Reggiano production area.

Fifty years of growth

From 6 wheels a day in 1972 to over 60,000 ageing today.
Growth built day by day, with passion and vision.

  1. The Foundation

    Silvestro Ferrarini and Liliana Bonetti found the Latteria Sociale San Salvatore and Ferrarini & Bonetti Srl. Everything begins with just 6 wheels of Parmigiano Reggiano produced each day.

  2. The First Ageing Warehouse

    The first cheese ageing warehouse is built, with a capacity of 24,000 wheels.

  3. Production Expansion

    The dairy is significantly expanded, bringing daily production to approximately 60 wheels.

  4. Major Expansion

    Following the acquisition of two dairies, Ferrarini & Bonetti Srl becomes one of the largest producers in the area, with a total daily output of 90 wheels.

  5. Second Warehouse

    A second ageing warehouse is built, with additional capacity for 25,000 wheels.

  6. Consolidation at Tortiano

    The three dairies are consolidated into a single facility located in Tortiano di Montechiarugolo, Parma.

  7. New Farm Acquisition

    Società Agricola Santa Lucia is acquired, contributing annual milk production of 3,000,000 litres.

  8. Infrastructure Upgrades

    The production area is expanded with 20 new vats and a modernised brining facility. An existing warehouse is enlarged by a further 8,000 wheel spaces.

  9. Renewable Energy

    A photovoltaic system generating over 370 kW of clean energy is installed, confirming the company's commitment to environmental sustainability.

  10. Water Sustainability

    The wastewater treatment plant is upgraded for improved purification of production process water.

  11. 60,000 Wheels Ageing

    A new warehouse with over 6,000 wheel spaces is built, bringing the total number of Parmigiano Reggiano wheels maturing to over 60,000.

  12. Process Innovation

    Major upgrade of milk storage and distribution facilities within the dairy, enabling more efficient raw material management and a further improvement in quality.

  13. A Solid, Rooted Company

    The company employs over 20 skilled staff and has a solid, cohesive structure capable of meeting the demands of an increasingly discerning market. The same passion as in 1972 drives the daily production of approximately 100 wheels of Parmigiano Reggiano.

A dairy that respects the land

Our production is largely powered by a photovoltaic system that significantly reduces the environmental impact of the entire production cycle. We invest in energy efficiency because caring for the environment is an integral part of our philosophy: the same land, the same responsibility.

Photovoltaic Energy

370 kW installed: over 60% of energy needs covered by our own renewable sources, significantly reducing our carbon footprint.

Water Sustainability

Upgraded wastewater treatment plant for improved sanitation of processing effluents: less waste, greater respect for the land and local waterways.

Process Innovation

Major upgrade of milk storage and distribution facilities for even more efficient raw material management and a further step up in quality.
